Strategi Pengendalian Kontaminasi pada Pemisahan dan Pengemasan Gula Kristal Putih melalui Evaluasi Cara Produksi Pangan Olahan yang Baik
Abstract
Food safety assurance has become a critical requirement in the food processing industry, particularly for products consumed directly by consumers such as white crystal sugar. The implementation of Good Processed Food Production Practices is essential to minimize contamination risks and ensure consistent product quality. This study aimed to evaluate the implementation of Good Processed Food Production Practices in the curing and bagging units of a white crystal sugar processing plant and to formulate contamination risk control strategies based on audit findings. A descriptive qualitative research design was employed at PT. XYZ, a white crystal sugar manufacturing company in Central Lampung, Indonesia. Data were collected through field observations, semi-structured interviews with production operators, and analysis of food safety audit documents conducted from June to August 2025. Compliance evaluation was performed using a gap analysis approach, while internal and external factors influencing risk control strategies were analyzed using Strengths, Weaknesses, Opportunities, and Threats analysis. The results showed that the company had implemented major components of Good Processed Food Production Practices; however, an existing external audit score of 74 was reported as category C ("adequate"), indicating that improvement was still required. The most prominent potential hazards in the observational findings were physical hazards, particularly possible metal contaminants and foreign objects in the curing and bagging processes; no formal likelihood-severity risk assessment was performed. The proposed strategy options included strengthening sanitation procedures, improving personnel hygiene monitoring, optimizing documentation systems, strengthening foreign-object control, and conducting regular internal audits. This study provides a context-specific practical contribution by linking CPPOB compliance evaluation with SWOT-based strategy formulation for the curing and bagging units; the proposed strategies require technical and post-intervention validation before their effectiveness can be inferred.
